Zesty Pink Lemonade Rice Krispie Treats

A refreshing twist on classic Rice Krispie Treats with a zesty pink lemonade flavor, perfect for summertime and celebrations.

  • 6 tbsp unsalted butter
  • 10 cups mini marshmallows
  • 1/4 cup thawed pink lemonade concentrate
  • 1 tbsp fresh lemon zest
  • 1 tsp pure vanilla extract
  • 510 drops pink gel food coloring (optional)
  • 6 cups crispy rice cereal
  • Optional: Extra lemon zest, pink/yellow sanding sugar, or sprinkles for garnish

Instructions

  1. Grease a 9×13-inch baking pan generously with butter or non-stick spray.
  2. In a large heat-proof bowl, place the crispy rice cereal.
  3. Melt the butter over medium-low heat in a medium saucepan.
  4. Add the mini marshmallows and stir until completely melted.
  5. Remove from heat and stir in the pink lemonade concentrate, lemon zest, vanilla extract, and food coloring if using.
  6. Pour the marshmallow mixture over the cereal and gently fold together.
  7. Transfer the mixture to the greased baking pan and press into an even layer.
  8. Let cool completely or refrigerate until firm.
  9. Cut into squares and serve.

Notes

Ensure butter and marshmallows are melted over low heat to avoid burning. Let treats cool completely before cutting to maintain shape.
