Vegan Raspberry Chia Pudding

A delightful and nutritious vegan dessert that combines fresh raspberries with creamy chia seeds.

  • 1 cup unsweetened almond milk
  • 1/4 cup chia seeds
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen raspberries
  • Additional raspberries for topping
  • Mint leaves for garnish (optional)

Instructions

  1. In a medium-sized bowl, whisk together the almond milk, chia seeds, maple syrup, and vanilla extract until well combined.
  2. Gently fold in the raspberries.
  3. Cover the bowl and refrigerate for at least 4 hours, or overnight.
  4. Once the pudding has set, stir gently.
  5. Spoon the pudding into serving bowls, and top with extra raspberries and mint leaves.
  6. Serve chilled and enjoy.

Notes

Add a touch of lemon zest or substitute maple syrup with agave nectar for variety.
