Ultimate Veggie Pizza

A delightful pizza topped with vibrant vegetables and gooey mozzarella, perfect for the whole family.

Ingredients

  • 1 batch easy whole wheat pizza dough or 1 pound store-bought pizza dough
  • 1 cup pizza sauce or marinara
  • 2 cups baby spinach
  • 2 to 3 cups shredded low-moisture part-skim mozzarella cheese
  • 1/2 cup jarred or canned artichokes, cut into 1” pieces
  • 1/2 cup fresh red or orange bell pepper, cut into narrow 2″ strips
  • 1/2 cup red onion, cut into thin wedges
  • 1/2 cup halved cherry tomatoes
  • 1/2 cup pitted Kalamata olives, halved lengthwise
  • 1/2 cup sliced almonds (optional)
  • Fresh basil leaves (optional)
  • Red pepper flakes (optional)
  • Finely grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 500°F and place a rack in the upper third of the oven. If using a baking stone, place it on the rack.
  2. Prepare the dough according to package instructions if using store-bought, or roll it out to about 1/4 inch thick on a floured surface if making homemade.
  3. Spread the pizza sauce evenly over the dough, leaving about 1 inch around the edges.
  4. Distribute baby spinach evenly over the sauce.
  5. Sprinkle shredded mozzarella cheese over the spinach.
  6. Top with artichokes, bell peppers, red onion, cherry tomatoes, and Kalamata olives. Optionally add sliced almonds.
  7. Transfer the pizza to the oven and bake for 10 to 12 minutes until the crust is golden brown and the cheese is bubbly.
  8. Remove from the oven, let cool slightly, then garnish with fresh basil, red pepper flakes, and grated Parmesan if desired.
  9. Slice and serve warm.
