Turkey Mashed Potato Pie

  • 1 tablespoon kosher salt (for boiling)
  • 1/4 teaspoon kosher salt (for seasoning)
  • 1/4 cup sour cream or full-fat plain yogurt
  • 2 1/2 cups chopped cooked turkey breast, skin removed
  • 1/2 tablespoon olive oil
  • 1 large shallot, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 2 celery stalks, chopped
  • 4 ounces frozen peas and carrots
  • 2 2/3 cups turkey or chicken broth, divided
  • 1/4 teaspoon kosher salt, to taste
  • 1/4 teaspoon black pepper, to taste
  • 2 tablespoons cornstarch

Instructions

  1. Prepare the Sweet Potatoes: Place diced sweet potatoes in a medium saucepan, cover with water, and add 1 tablespoon kosher salt. Bring to a boil for 16-18 minutes until tender, drain, and mash with 1/4 teaspoon kosher salt and sour cream. Keep warm.
  2. Preheat Your Oven: Preheat the oven to 375°F (190°C).
  3. Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add shallot, parsley, thyme, and sage; sauté for 2-3 minutes until softened.
  4. Incorporate the Celery: Add celery and sauté for an additional 4-5 minutes.
  5. Build the Filling: Add frozen peas and carrots, turkey breast, and 2 cups of broth, seasoning with kosher salt and pepper. Bring to a boil, then simmer for 8-10 minutes.
  6. Thicken the Mixture: Combine remaining 2/3 cup broth with cornstarch, stir into turkey mixture, and cook for another 3-4 minutes to thicken.
  7. Assemble the Pie: Transfer the turkey filling to a greased baking dish and top with mashed sweet potatoes.
  8. Bake to Perfection: Bake for about 20 minutes, then broil for an additional 2-3 minutes to achieve a golden crust. Serve warm.

For best results, use fresh vegetables and homemade broth for richer flavors. Adjust seasoning to taste during cooking.
