Tuna Melt Sandwich

A delightful blend of creamy tuna salad and gooey melted cheese, served between crispy bread. Perfect for lunch or a cozy dinner.

  • 2 (5-ounce) cans of white albacore tuna in water, drained
  • 2 celery stalks, minced (about 1/4 cup)
  • 1 small shallot, minced
  • 1/3 cup full-fat Greek yogurt
  • Zest of 1 lemon
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon parsley, chopped
  • 8 slices of multigrain bread or any sandwich bread
  • 8 slices of cheddar cheese
  • 2 tablespoons unsalted butter, divided

Instructions

  1. In a medium bowl, combine drained tuna, minced celery, minced shallot, Greek yogurt, lemon zest, Dijon mustard, salt, black pepper, and chopped parsley. Mix until well incorporated.
  2. Layout eight slices of bread. Place a slice of cheddar cheese on each slice. Top four slices with about 1/2 cup of tuna salad.
  3. Heat a skillet over medium-low heat and melt 1 tablespoon of butter. Place two sandwiches in the skillet and cook until bread is golden brown and cheese is melted, about 2-3 minutes per side.
  4. Remove the first two sandwiches, add remaining butter to the skillet, and repeat with the other sandwiches.
  5. Serve immediately, paired with a salad or soup if desired.

Notes

For an extra kick, add a dash of hot sauce to your tuna salad. Use whole-grain or gluten-free bread as a healthier alternative.
