  • 1 1/2 cups graham cracker crumbs
  • 2 tablespoons brown sugar
  • 6 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 cup heavy whipping cream
  • Fresh strawberries for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, brown sugar, and melted butter. Mix until coated.
  3. Line a 9×9-inch baking pan with parchment paper and press the crumb mixture into the bottom. Bake for 8-10 minutes until golden brown. Let cool completely.
  4. In a large bowl, beat softened cream cheese until smooth. Add granulated sugar, vanilla extract, and lemon juice. Mix well.
  5. In another bowl, whip heavy cream to soft peaks and fold into the cream cheese mixture until smooth.
  6. Pour the filling over the cooled crust and smooth it out. Refrigerate for at least 4 hours or until set.
  7. Lift the cheesecake bars out of the pan using the parchment paper, cut into squares, and top with fresh strawberries before serving.

For added flavor, consider mixing in flavored extracts or garnishing with melted chocolate.
