Spicy Glazed Chicken with Stir-Fried Cucumbers and Scallions

A delightful recipe featuring juicy chicken thighs coated in a sweet and spicy glaze, complemented by crisp cucumbers and vibrant scallions.

  • 4 boneless, skinless chicken thighs or breasts
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp sriracha or chili garlic sauce
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp vegetable oil, divided
  • 1 large cucumber, sliced
  • 4 scallions, sliced into 1-inch pieces
  • Salt and pepper, to taste
  • Sesame seeds (optional, for garnish)
  • Cooked rice (for serving)

Instructions

  1. In a small bowl, whisk together the soy sauce, rice vinegar, honey (or maple syrup), sriracha, sesame oil, minced garlic, and grated ginger to create the glaze.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then add it to the hot skillet. Sear the chicken for about 6-8 minutes until golden brown.
  3. Pour the prepared glaze over the chicken and cook for an additional 2-3 minutes, stirring gently to ensure the glaze adheres and thickens.
  4. Remove the chicken from the skillet and set it aside. In the same skillet, add the remaining tablespoon of oil and stir-fry the cucumbers and scallions for 2-3 minutes.
  5. Return the glazed chicken back to the skillet, tossing it with the stir-fried vegetables. Serve hot over rice, garnished with sesame seeds if desired.

Notes

Marinate the chicken in half of the glaze for 30 minutes for more flavor. Optional: Top with roasted peanuts or cashews.
