Spicy Coconut Lime Soup

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (13.5 oz) coconut milk
  • 4 cups chicken or vegetable broth
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 teaspoon sugar
  • 2 cups cooked shrimp, peeled and deveined
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, julienned
  • 1 cup spinach or kale, chopped
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
  2. Add minced garlic and grated ginger; cook for an additional minute.
  3. Stir in red curry paste and cook for another minute.
  4. Pour in coconut milk and broth; stir to combine.
  5. Add fish sauce, lime juice, and sugar. Allow to simmer for about 5 minutes.
  6. Introduce sliced mushrooms and red bell pepper; cook for 5-7 minutes.
  7. Stir in cooked shrimp and leafy greens; cook until heated through.
  8. Serve with fresh cilantro and lime wedges.

Notes

Add more heat with extra red curry paste or chili flakes. Substitute vegetables as needed and serve the soup over rice or noodles for a heartier meal.
