Snowball Coconut Rum Balls

Delightful no-bake treats that bring festive warmth with sweetened coconut, creamy vanilla, and cookie crumbs, dusted with powdered sugar.

  • 2 cups crushed vanilla wafer cookies
  • 1 cup sweetened shredded coconut
  • 1 cup powdered sugar
  • 2 tablespoons cocoa powder
  • ½ cup light or dark rum (or non-alcoholic rum flavoring)
  • 2 tablespoons corn syrup or honey
  • ½ teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine the crushed vanilla wafer cookies, shredded coconut, powdered sugar, and cocoa powder. Stir until well mixed.
  2. Add the rum (or rum flavoring), corn syrup or honey, and vanilla extract. Mix thoroughly until all components are combined into a sticky mixture.
  3. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  4. Coat each ball in powdered sugar for a snowy appearance.
  5. Refrigerate the rum balls for at least one hour to set.
  6. Store in an airtight container in the refrigerator until serving.
