Smoky BBQ Meatloaf Stuffed Peppers

A delightful main course that combines the classic flavors of meatloaf with the vibrant visuals of stuffed bell peppers, topped with melted cheese.

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup smoky BBQ sauce
  • 1 cup shredded cheese
  • 1/2 cup breadcrumbs
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until soft and fragrant.
  4. In a large bowl, combine the ground beef, smoky BBQ sauce, breadcrumbs, sautéed onion, salt, and pepper. Mix until well combined.
  5. Generously stuff each bell pepper with the meat mixture, pressing down gently to pack it in.
  6. Sprinkle shredded cheese on top of each filled pepper.
  7. Pour a little water into the bottom of the baking dish to help steam the peppers.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and the meat is cooked through.
  10. Let cool slightly before serving.

Notes

For added nutrition, consider adding chopped mushrooms or zucchini to the filling. Garnish with fresh herbs like parsley for a burst of flavor.
