  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp finely chopped fresh rosemary or thyme
  • 3/4 cup dark chocolate chunks
  • 3/4 cup dried tart cherries
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar for about 2-3 minutes until light and fluffy.
  3. Beat in the egg and vanilla extract until smooth.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt, and herbs.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the dark chocolate chunks and dried cherries.
  7. Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Sprinkle with flaky sea salt.
  9. Bake for 10-12 minutes until the edges are set but the centers remain soft.
  10. Let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra touch, add crushed nuts or cinnamon to the dough. Substitute half the butter with unsweetened applesauce for a lighter version.
