Savory Chicken Broccoli Rice Casserole

  • 34 boneless skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh broccoli florets
  • 1 cup long-grain white rice
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp garlic powder
  • 2 cups low-sodium chicken broth
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a large baking dish with nonstick spray.
  3. Heat olive oil in a skillet over medium heat.
  4. Add diced chicken, seasoning with salt and pepper, and sauté until golden brown (6-8 minutes).
  5. Stir in broccoli and uncooked rice, sautéing until broccoli is vibrant green.
  6. In a bowl, whisk together chicken broth, sour cream, garlic powder, onion powder, and half of the cheddar cheese.
  7. Pour the creamy mixture over the chicken and stir to coat.
  8. Transfer the mixture into the baking dish, spreading it evenly.
  9. Top with the remaining cheddar cheese.
  10. Bake uncovered for 35-40 minutes, until golden and bubbling.
  11. Let it rest for 5-10 minutes before serving.

Notes

For a healthier version, substitute brown rice for white rice, and use low-fat Greek yogurt instead of sour cream. This casserole can be prepared a day ahead and stored in the fridge.
