Healthy Blueberry Cottage Cheese Breakfast Bake

A delicious and nutritious breakfast bake combining cottage cheese, blueberries, and rolled oats for a wholesome morning treat.

  • 4 large Eggs
  • 2 cups Rolled Oats
  • 2 cups Fresh Blueberries
  • 0.25 cups Honey or Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • 0.5 teaspoon Salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cottage cheese, eggs, oats, honey, vanilla extract, cinnamon, and salt. Mix until well-blended.
  3. Gently fold in the blueberries.
  4. Grease a baking dish and pour the batter evenly into the dish.
  5. Bake for 35-40 minutes until golden brown.
  6. Allow to cool for 5-10 minutes before serving.

Notes

For vegan options, substitute cottage cheese with vegan ricotta and eggs with flax or chia seeds. You can also experiment with other fruits like raspberries or strawberries.
