Ingredients

Scale
  • 2 1/4 cups + 1 tbsp all-purpose flour
  • 2 tbsp cocoa powder
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 3/4 cup unsalted butter (room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 2 tsp vinegar
  • 1 1/2 tbsp red food coloring
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (180°C) and line your baking sheets with parchment paper.
  2. In a medium bowl, combine the flour, cocoa powder, baking soda, and salt; mix until blended.
  3. In a large bowl, cream the butter and both sugars until light and fluffy.
  4. Beat in the egg until well incorporated.
  5. Add vanilla extract, vinegar, and red food coloring; mix until the color is uniform.
  6. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  7. Fold in the white chocolate chips evenly throughout the dough.
  8. Use a cookie scoop to portion out the dough and place onto prepared baking sheets, about 2 inches apart.
  9. If desired, press a few reserved white chocolate chips into the tops of the dough balls.
  10. Bake for 7-9 minutes until soft in the center; they will firm up after cooling.
  11. Allow to cool on the baking sheets for 4-5 minutes before transferring to a wire rack.

Notes

Chill the dough for thicker cookies. Substitute half white chocolate chips with dark chocolate chips for contrast. Can add nuts for texture.
