Red Velvet Cheesecake

A stunning dessert that combines rich layers of red velvet cake with a creamy cheesecake filling, perfect for any celebration.

  • 2 cups red velvet cake mix
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup milk
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs (for filling)
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 tablespoon cocoa powder
  • Red food coloring (optional)
  • Chocolate shavings or berries (for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a springform pan.
  2. In a mixing bowl, combine the red velvet cake mix, melted butter, 2 eggs, and milk. Mix until well combined and smooth, then press this mixture into the bottom of the prepared springform pan.
  3. In another bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth. Add 2 eggs, sour cream, flour, and cocoa powder, mixing until you have a thick, creamy filling.
  4. Pour the cheesecake filling over the red velvet base, smoothing it out evenly.
  5. Bake for 55-60 minutes until the filling is set but slightly jiggly in the center.
  6. Once done, turn off the oven and let the cheesecake cool inside for an hour.
  7. Transfer to the refrigerator and chill for at least 4 hours or overnight.
  8. Before serving, garnish with chocolate shavings or fresh berries.

Notes

Use room temperature ingredients for a smoother filling. Consider baking in a water bath to prevent cracks.
