  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 cup pistachio cream (homemade or store-bought)
  • 2 cups all-purpose flour (or gluten-free blend)
  • 1 teaspoon baking powder (fresh)
  • 1/2 teaspoon baking soda (fresh)
  • A pinch of salt
  • 1 cup roasted pistachios (chopped, unsalted)
  • 1 cup chocolate chunks (dark recommended)
  • Dried fruits (like cranberries or cherries)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the softened unsalted butter and granulated sugar until light and fluffy.
  3. Incorporate the egg and pistachio cream, mixing until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add this to the wet ingredients until just mixed.
  5. Gently fold in the chopped roasted pistachios, chocolate chunks, and dried fruits.
  6. Chill the dough for at least 30 minutes.
  7. Scoop the chilled dough into balls and place on a parchment-lined baking sheet.
  8. Bake for about 12-15 minutes until edges are golden brown.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack. Drizzle additional melted chocolate on top if desired.
