Pistachio Cream Chocolate Cookies

Delightful cookies that combine the rich flavor of cocoa with the creamy goodness of pistachio, perfect for any occasion.

  • 1 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder (Dutch-processed)
  • 1/2 cup pistachio cream
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, combine the room temperature butter, granulated sugar, and brown sugar. Beat until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Then, incorporate the pistachio cream and blend until smooth.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt until combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  6. Fold in the chocolate chips until evenly distributed.
  7. Drop mounds of dough onto the prepared baking sheets, leaving about two inches between each mound.
  8. Bake for 10-12 minutes, or until the edges are set but the centers remain soft.
  9. Cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

For thicker cookies, chill the dough for at least 30 minutes before baking.
