Perfect Scones

Fluffy, buttery scones that are perfect for breakfast or tea time, easy to make, and sure to delight any crowd.

Ingredients

  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/2 teaspoon salt
  • 2 and 1/2 teaspoons baking powder
  • 1/2 cup (113g) unsalted butter, frozen
  • 1/2 cup (120ml) heavy cream or buttermilk
  • 1 large egg
  • 1 and 1/2 teaspoons pure vanilla extract
  • 1 to 1.5 cups optional add-ins (chocolate chips, fresh berries, nuts)
  • Coarse sugar for topping (optional)

Instructions

  1. In a large bowl, whisk together the flour, sugar, salt, and baking powder until combined.
  2. Grate the frozen butter into the flour mixture and combine until it resembles pea-sized crumbs.
  3. In a small bowl, whisk together the heavy cream, egg, and vanilla extract, then pour over the dry ingredients.
  4. Gently mix until just combined and slightly moist. Fold in any mix-ins.
  5. Form the dough into a ball on a floured surface, adjust texture with extra flour or cream as needed.
  6. Flatten the dough into an 8-inch disc and cut into 8 wedges.
  7. Brush tops with heavy cream and sprinkle with coarse sugar, refrigerate for 15 minutes.
  8. Preheat oven to 400°F (204°C) and bake for 18-25 minutes until golden brown.
  9. Cool on a wire rack for a few minutes before serving.

Notes

Keep the butter in the freezer until ready to use for best results. Avoid overmixing to keep scones light and airy. Serve warm with butter, clotted cream, or jam.
