Passion Fruit Tart

A vibrant dessert featuring a buttery crust and a creamy passion fruit filling, perfect for any gathering.

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (cold)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 cup passion fruit pulp
  • 2 tbsp lemon juice
  • 2 tbsp cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the flour and granulated sugar.
  3. Cut the cold butter into the flour mixture until it resembles coarse crumbs.
  4. Press the mixture evenly into the bottom and up the sides of a tart pan.
  5. Bake for about 15 minutes or until lightly golden brown.
  6. In another bowl, whisk together the egg, sugar, lemon juice, and passion fruit pulp until smooth.
  7. Mix in the cornstarch until there are no lumps.
  8. Pour the passion fruit mixture into the cooled tart crust.
  9. Bake for an additional 20-25 minutes until the edges are set.
  10. Allow the tart to cool completely before slicing and serving.

Notes

Use cold butter for a flaky crust. The tart can be made a day in advance. For a vegan version, substitute the egg with a flax egg or silken tofu.
