Oreo Pancakes

Indulge in fluffy pancakes infused with the rich flavor of Oreo cookies, perfect for breakfast or brunch.

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 large egg
  • 1 ¼ cups buttermilk (or milk with 1 tablespoon of lemon juice/vinegar)
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 15 Oreo cookies, crushed (reserve a few for topping)
  • Butter or oil, for greasing the griddle
  • Optional toppings: whipped cream, chocolate syrup, extra crushed Oreos

Instructions

  1. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and granulated sugar.
  2. In a separate bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  4. Fold in the reserved crushed Oreo cookies.
  5. Allow the batter to rest for 5-10 minutes.
  6. Heat a lightly oiled griddle or non-stick frying pan over medium heat.
  7. Pour ¼ cup of batter onto the hot griddle for each pancake.
  8. Cook for 2-3 minutes until bubbles form, then flip the pancakes.
  9. Cook for another 2-3 minutes until golden brown and cooked through.
  10. Stack the pancakes on a plate and add your favorite toppings.
  11. Serve warm and enjoy!

Notes

For added decadence, consider adding a pinch of espresso powder to the batter. Experiment with different toppings like sliced bananas or fresh berries.
