Oreo Cupcakes

  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 cup crushed Oreos
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup crushed Oreos for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large bowl, combine the chocolate cake mix, eggs, vegetable oil, and water. Mix until smooth to create a luscious batter.
  3. Gently fold in the 1 cup of crushed Oreos.
  4. Fill each cupcake liner about 2/3 full with the batter and bake for 18-20 minutes.
  5. Let the cupcakes cool completely before frosting.
  6. To make the frosting, beat together the softened butter and powdered sugar until creamy.
  7. Add heavy cream and vanilla extract, mixing until well combined. Fold in 1 cup of crushed Oreos.
  8. Frost the cooled cupcakes and sprinkle additional crushed Oreos on top.
  9. Serve and enjoy!

Ensure your butter is at room temperature for easier mixing. For a lighter option, you can use egg whites instead of whole eggs.
