Orange Breakfast Pancakes

Delightful pancakes infused with zesty orange flavors, perfect for breakfast or brunch.

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 large egg
  • 1 1/4 cups buttermilk
  • 1/4 cup freshly squeezed orange juice
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon orange zest
  • 1/2 teaspoon vanilla extract
  • Optional: Orange segments, maple syrup, powdered sugar for serving

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  2. In a separate bowl, whisk together the egg, buttermilk, orange juice, melted butter, orange zest, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  4. Cover the bowl and let the batter rest for 5-10 minutes.
  5. Heat a lightly oiled griddle or non-stick frying pan over medium heat.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2-3 minutes until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
  8. If making a large batch, keep pancakes warm in a preheated oven.
  9. Serve with your favorite toppings.

Notes

For added flavor, consider adding a pinch of cinnamon, blueberries, or chocolate chips to the batter.
