Olive Tapenade & Goat Cheese Sandwich

  • 4 slices of hearty, rustic bread
  • 4 oz of creamy goat cheese
  • 1/2 cup of robust olive tapenade
  • Fresh arugula or spinach (optional)
  • Olive oil (for grilling or toasting)

Instructions

  1. Spread a generous layer of olive tapenade on two slices of bread.
  2. On the other two slices, spread the creamy goat cheese.
  3. If using, layer fresh arugula or spinach on top of the goat cheese.
  4. Close the sandwiches with the tapenade-covered slices, pressing down slightly.
  5. Heat a skillet over medium heat and add olive oil.
  6. Place the sandwiches in the skillet and sauté until golden brown, about 3-4 minutes per side.
  7. Remove from skillet, slice in half, and serve warm.

Notes

For added flavor, consider incorporating roasted garlic into the goat cheese. Using a panini press can enhance the sandwich’s texture.
