Nopalito Tofu Scramble

A vibrant and nourishing dish featuring tender nopalitos and creamy crumbled tofu, perfect for breakfast or brunch.

  • 1 tablespoon vegetable oil (or ¼ cup water/broth)
  • ½ large yellow or red onion (diced)
  • 4 to 5 button or shiitake mushrooms (sliced)
  • ½ cup sliced nopalitos (cactus, from a jar)
  • 3 garlic cloves (minced)
  • 1 ½ teaspoons ground cumin
  • Pinch of smoked paprika (optional)
  • 1 (14-ounce) package extra firm tofu (drained and pressed)
  • Salt (to taste)

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat until shimmering.
  2. Add the diced onion, sliced mushrooms, nopalitos, and minced garlic to the skillet. Sauté for 3 to 4 minutes until the onions turn translucent.
  3. Sprinkle the ground cumin and smoked paprika over the vegetable mixture. Stir for about a minute.
  4. Crumble the drained tofu directly into the pan and mix well. Cook for another 3 to 4 minutes until heated through.
  5. Season with salt to taste and serve hot for the best flavor.

Notes

Pressing tofu properly helps achieve a crispy texture. Customize with additional vegetables or spices to suit your taste.
