No-Bake Peanut Butter Cheesecake Balls

Delightful no-bake cheesecake balls combining creamy peanut butter and rich cream cheese for a sweet indulgence.

  • 1 ½ cups graham-cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • ½ tsp vanilla extract
  • ⅓ cup heavy whipping cream, whipped
  • ½ cup creamy peanut butter
  • 2 tbsp powdered sugar
  • Pinch of salt
  • ¼ cup thick caramel sauce (optional)
  • 1 ½ cups white chocolate chips + 1 tbsp coconut/vegetable oil
  • 1 cup dark or semi-sweet chocolate chips + 1 tbsp coconut/vegetable oil
  • Crushed graham cracker crumbs or holiday sprinkles for topping
  • Flaky sea salt (optional)

Instructions

  1. In a mixing bowl, combine the creamy peanut butter, powdered sugar, and a pinch of salt. Mix until smooth, then roll into small balls and freeze for 15–20 minutes.
  2. In another bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth. Fold in the whipped cream and chill for 10 minutes.
  3. Blend the graham-cracker crumbs, melted butter, and 2 tablespoons of sugar until resembling wet sand. Press about 1 teaspoon onto a parchment-lined sheet and freeze for 10 minutes.
  4. Take a tablespoon of the cheesecake filling, flatten it, encase a peanut butter ball in it, and roll into a smooth ball. Place on the graham cracker base and chill for 30–45 minutes.
  5. Melt the white chocolate chips and 1 tablespoon of coconut oil in the microwave. Dip the bottoms of each cheesecake ball into the mixture and chill for 10 minutes.
  6. Melt the dark chocolate chips and coconut oil for drizzling. Drizzle over the cheesecake balls and finish with toppings of choice. Chill for an additional 15 minutes.
  7. Serve chilled or at room temperature, enjoying these delightful cheesecake balls at any occasion.

Notes

Can be customized with various toppings or flavors. Store in an airtight container for up to a week or freeze for longer storage.
