Neapolitan Ice Cream Sandwiches

Delightful ice cream sandwiches featuring soft chocolate cookies filled with creamy vanilla and strawberry ice cream.

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons natural unsweetened cocoa powder
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup sugar
  • 1 large egg
  • 1/2 cup milk
  • 1/2 gallon vanilla ice cream
  • 1/2 gallon strawberry ice cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat the butter and sugar together until light and fluffy.
  4. Add the egg and milk to the mixture, and mix until fully incorporated.
  5. Gradually fold in the dry ingredients until just combined.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheets.
  7. Bake for 10-12 minutes or until the edges are set and the center appears slightly soft; cool on a wire rack.
  8. Once cool, scoop a generous portion of vanilla ice cream onto one cookie, add a scoop of strawberry ice cream on top, and cap with a second cookie.

Notes

Chill the cookie dough for 30 minutes before baking to enhance flavor and shape. Consider rolling the sides in sprinkles or nuts for added texture.
