Mother’s Day Pink Velvet Cake

  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup buttermilk (or milk mixed with 1 tbsp vinegar)
  • 2 large eggs (room temperature)
  • ½ cup vegetable oil (or melted butter)
  • 2 tbsp red gel food coloring
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round 9-inch cake pans.
  2. Sift together the all-purpose flour, cocoa powder, baking powder, and salt in a large bowl.
  3. In another bowl, whisk together the granulated sugar, buttermilk, eggs, vegetable oil, red gel food coloring, and pure vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet mixture while stirring gently until just combined.
  5. Pour the batter evenly into the prepared pans and bake for 25-30 minutes.
  6. Cool the cakes in the pans for about 10 minutes, then transfer to wire racks to cool completely.
  7. Frost with your favorite frosting, such as cream cheese frosting.
