  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 1 cup mini chocolate chips (divided)
  • 2 cups white chocolate chips
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 tsp peppermint extract
  • Green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Prepare the brownie mix according to package instructions and spread it evenly into the lined pan. Bake for 20 minutes and let it cool slightly.
  3. Cream together the softened butter, brown sugar, and granulated sugar until fluffy, then add the egg and vanilla extract, mixing well.
  4. Gradually stir in the flour and salt, then fold in 1/2 cup of mini chocolate chips.
  5. Spread the cookie dough layer evenly over the cooled brownie base.
  6. In a saucepan, melt the white chocolate chips with sweetened condensed milk over low heat, stirring until smooth.
  7. Remove from heat, add peppermint extract and optional green food coloring, then fold in the remaining mini chocolate chips.
  8. Pour the mint chocolate mixture over the cookie dough layer and spread it evenly.
  9. Refrigerate for at least 2 hours to set, then lift out, cut into squares, and serve.
