Mini Christmas Log

A rich chocolate roll filled with whipped cream, dusted with cocoa or powdered sugar, perfect for festive celebrations.

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 cup heavy cream
  • 1 tsp pure vanilla extract
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, cocoa powder, sugar, and eggs. Whisk until smooth and combined.
  3. Pour the batter onto the prepared baking sheet, spreading it evenly. Bake for 12-15 minutes until the cake springs back when touched.
  4. Invert the cake onto a towel dusted with powdered sugar. Roll it tightly while warm, then let it cool completely.
  5. Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  6. Unroll the cooled cake, spread the whipped cream filling on top, then roll back up seam-side down.
  7. Dust with cocoa or powdered sugar before serving.

Notes

For added flavor, consider adding a splash of espresso powder or a layer of fruit jam beneath the whipped cream.
