Mexican Caesar Salad

A vibrant twist on the classic Caesar salad, featuring crispy textures and fresh ingredients like romaine lettuce, black beans, and corn.

  • 2 heads of romaine lettuce, chopped
  • 1 cup cooked and drained corn
  • 1 cup cooked black beans
  • 1 medium avocado, sliced or cubed
  • 12 cups tortilla strips or crumbled tortilla chips
  • ½ cup cilantro, chopped
  • ¼ cup cotija cheese, crumbled
  • Lime wedges (optional, for serving)
  • ½ cup Caesar salad dressing
  • ¼ teaspoon Mexican seasoning blend (optional)

Instructions

  1. Chop the romaine lettuce and place it in a large serving bowl.
  2. Drain the corn and black beans to remove excess moisture.
  3. Slice or cube the avocado just before assembling the salad.
  4. Layer the corn and black beans over the romaine lettuce.
  5. Gently add the avocado slices or cubes on top.
  6. Sprinkle the tortilla strips across the salad.
  7. Top with chopped cilantro and crumbled cotija cheese.
  8. If using, mix the Mexican seasoning blend into the Caesar dressing.
  9. Drizzle the dressing over the salad and toss gently to coat.
  10. Serve immediately with lime wedges on the side.

Notes

For optimal freshness, assemble the salad just before serving. Consider adding grilled chicken or shrimp for extra protein.
