Marshmallow-Surprise Hot Cocoa Cookies

Delightful cookies that combine the rich flavors of hot cocoa with gooey marshmallows, perfect for cozy evenings or festive gatherings.

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined.
  3. Cream the softened butter with granulated sugar and brown sugar until fluffy.
  4. Add the egg and vanilla extract, mixing until smooth.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
  6. Gently fold in the mini marshmallows.
  7. Scoop the dough onto lined baking sheets, about two inches apart.
  8. Bake for 10-12 minutes until the edges are firm and the centers remain soft.
  9. Let cool on the baking sheets for a couple of minutes before transferring to wire racks to cool completely.

Notes

Chill the dough for 30 minutes for thicker cookies. Consider mixing in chocolate chips or peppermint marshmallows for variations.
