Lighter White Chicken Lasagna with Spinach & Mushroom Joy

A delightful twist on a classic comfort food, this lighter lasagna is filled with creamy goodness, tender chicken, and vibrant spinach.

  • 1 medium Onion
  • 8 ounces White Mushrooms
  • 5 ounces Spinach
  • 2 cups Cooked Chicken
  • 1/4 cup All-Purpose Flour
  • 2 cups Milk
  • 1/4 teaspoon Nutmeg
  • 1 cup Parmesan Cheese
  • 2 cups Mozzarella Cheese
  • 1 teaspoon Basil
  • 1 teaspoon Oregano
  • 1/2 teaspoon Red Pepper Flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the chopped onion in a large skillet with a splash of oil over medium heat for 3-4 minutes until translucent.
  3. Stir in the white mushrooms and a pinch of salt, and sauté for 5-7 minutes until browned and tender.
  4. Add fresh spinach and stir until wilted, about 2 minutes. Remove from heat.
  5. Melt 2 tablespoons of butter in a saucepan over medium heat, stir in flour to create a roux, whisking for a couple of minutes until light golden.
  6. Gradually whisk in milk; continue whisking until the sauce thickens, about 5-7 minutes. Season with salt, pepper, and nutmeg.
  7. In a large bowl, mix sautéed vegetables, shredded chicken, half the mozzarella, and half the Parmesan with the sauce.
  8. Spread a thin layer of the chicken mixture in a baking dish. Layer lasagna sheets, then more chicken mixture; repeat until all ingredients are used, finishing with a layer of sauce on top.
  9. Sprinkle remaining mozzarella and Parmesan cheese over the last layer.
  10. Cover with foil and bake for 25 minutes; then remove the foil and bake for an additional 15-20 minutes until bubbly and golden.
  11. Let cool for 10 minutes before serving.

Notes

To enhance flavor, consider adding fresh herbs like thyme or parsley. For a vegetarian option, swap chicken for roasted vegetables.
