Lemon Loaf Starbucks

A delightful and refreshing cake with a tender crumb and bright, zesty flavor, perfect for enjoying with coffee or as a snack.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 3 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons finely grated lemon zest
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1/4 cup freshly squeezed lemon juice (plus more if needed)
  • 1 tablespoon finely grated lemon zest

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  2. Cream together the softened butter and granulated sugar until light and fluffy (3-5 minutes).
  3. Beat in the eggs one at a time, mixing thoroughly after each addition.
  4. Add vegetable oil, sour cream, milk, lemon juice, lemon zest, and vanilla extract to the butter mixture. Beat until just combined.
  5. Gradually mix in the dry ingredients until just incorporated.
  6. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 55 to 70 minutes, or until a wooden skewer comes out clean.
  9. Let the loaf cool in the pan for 10-15 minutes before inverting onto a wire rack.
  10. Whisk together powdered sugar, lemon juice, and lemon zest for the glaze, then pour over the cooled loaf.
  11. Allow the glaze to set for at least 30 minutes before slicing and serving.

Notes

For a richer lemon flavor, add extra lemon zest. If you don’t have sour cream, Greek yogurt works as a substitute. Store wrapped in plastic for freshness.
