Leftover Mashed Potato Cheese

A deliciously rich dish that transforms leftover mashed potatoes into crispy, cheesy puffs.

  • 2 cups cold or room temperature leftover mashed potatoes
  • 1 cup shredded sharp or medium cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions or chives
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh parsley (optional)
  • 2 tablespoons sour cream or Greek yogurt
  • 1 cup Panko or regular breadcrumbs
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried oregano
  • 2 tablespoons grated Parmesan cheese
  • 1 large egg, beaten
  • 1/2 cup all-purpose flour
  • Cooked crumbled bacon (optional)
  • Chopped jalapeño or chili flakes (optional)
  • Minced sautéed onions or caramelized shallots (optional)
  • Shredded cooked chicken (optional)

Instructions

  1. In a large mixing bowl, combine leftover mashed potatoes, cheddar, mozzarella, and Parmesan cheeses with the egg, garlic powder, onion powder, salt, pepper, parsley, and sour cream. Mix until smooth.
  2. Using a tablespoon, shape the mixture into 1 to 1.5-inch balls and place them on a parchment-lined baking sheet.
  3. Refrigerate the formed puffs for about 20 minutes to firm up.
  4. Prepare three bowls: one with flour, one with beaten egg, and one with breadcrumbs mixed with Parmesan, paprika, and oregano.
  5. Roll each puff in flour, dip in the egg wash, then coat with the breadcrumb mixture.
  6. For cooking, choose one of the methods: Air fryer at 375°F for 10-12 minutes, bake in a preheated oven at 400°F for 20-25 minutes, or fry in oil over medium heat until golden brown.

Notes

Make sure your mashed potatoes are well-seasoned for best flavor. Chill before cooking for more structured puffs. Feel free to customize by adding leftover veggies or proteins.
