Keto Taco Casserole

A warm, gooey casserole bursting with rich flavors of seasoned ground beef, melted cheese, and aromatic veggies, perfect for a low-carb lifestyle.

  • 2 lbs ground beef (80/20 blend)
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 4 tbsp keto-friendly taco seasoning
  • 2 tbsp tomato paste
  • 2 medium eggs
  • ½ cup heavy whipping cream
  • 1 ½ cups shredded cheese (cheddar or Mexican blend)
  • 1 jalapeno, sliced (optional)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a large skillet over high heat, cook the ground beef, diced onion, diced bell pepper, and minced garlic until the meat is browned and the onions are translucent. Drain excess grease.
  3. Stir in the taco seasoning and tomato paste until evenly coated.
  4. Spread the mixture evenly in a 9×13 inch casserole dish.
  5. In a bowl, whisk together the eggs and heavy whipping cream, then stir in half of the shredded cheese.
  6. Pour the creamy mixture over the meat and vegetable layer in the casserole dish.
  7. Sprinkle the remaining shredded cheese and sliced jalapenos on top.
  8. Bake for 15-17 minutes, until the cheese is melted and bubbly.
  9. Let the casserole rest for 5 minutes before serving.

Notes

Customize the cheese by mixing different types. Add more veggies for extra nutrients or make it spicy with additional jalapenos. This dish is great for meal prep and can be stored covered in the refrigerator for 3-4 days.
