  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 cup chopped nuts (walnuts or pistachios)
  • 1/2 cup mini chocolate chips (optional)
  • 1 cup powdered sugar (for dusting)
  • 2 tablespoons milk or water (for icing)
  • Food coloring (optional for icing)

Instructions

  1. Prepare the Dough: Mix the all-purpose flour, almond flour, baking powder, and salt in a large bowl. In a separate bowl, cream the softened butter and granulated sugar until fluffy. Add the egg, vanilla, and almond extracts. Incorporate the dry mixture, then fold in the chopped nuts and chocolate chips.
  2. Chill the Dough: Wrap the dough in plastic wrap, shape it into a disk, and refrigerate for at least an hour.
  3. Shape and Bake: Preheat the oven to 350°F (175°C). Roll the chilled dough into small balls, flatten slightly, and place on a lined baking sheet. Bake for 10-12 minutes until golden.
  4. Decorate the Cookies: Cool the cookies, then mix powdered sugar with milk or water for icing. Optionally add food coloring and decorate the cookies.

Notes

Ensure butter is at room temperature for a smooth texture. Chill dough to maintain shape while baking. Experiment with different nuts or spices for unique flavors.
