  • 1 cup Crushed Chocolate Cookies
  • 1/2 cup Melted Butter
  • 16 oz Cream Cheese
  • 3/4 cup Granulated Sugar
  • 8 oz Melted Dark Chocolate
  • 1 tsp Vanilla Extract
  • 4 Large Eggs
  • 1 cup Fresh Raspberries

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the crushed chocolate cookies and melted butter. Press this mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth and gradually add the sugar, mixing well.
  4. Incorporate the melted dark chocolate and vanilla extract, beating until combined.
  5. Add the eggs one by one, mixing gently.
  6. Fold in the fresh raspberries carefully.
  7. Pour the filling over the crust in the springform pan.
  8. Bake for 55-60 minutes until slightly jiggly in the center.
  9. Allow it to cool, then refrigerate for at least 4 hours before serving.

Notes

Using room temperature cream cheese helps achieve a smooth batter. Consider garnishing with fresh raspberries and chocolate sauce.
