Honey Glazed Chicken Thighs with Fresh Herbs

A succulent dish featuring chicken thighs coated in a luscious honey glaze and infused with fresh herbs, perfect for weeknight dinners and special occasions.

  • 4 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels and season with salt and pepper.
  3. In a small bowl, whisk together honey, soy sauce, Dijon mustard, minced garlic, thyme, and rosemary.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken thighs skin-side down for about 4–5 minutes until golden-brown.
  5. Flip the thighs and cook for another 2 minutes.
  6. Pour the glaze over the chicken, ensuring they are well coated.
  7. Transfer the skillet to the oven and roast for 20–25 minutes until the internal temperature reaches 165°F (74°C).
  8. Spoon the pan sauce over the chicken before serving and garnish with fresh parsley.

Notes

For extra flavor, consider marinating the chicken in the glaze for a couple of hours before cooking. You can also use boneless chicken thighs for a quicker cooking time.
