Honey-Drizzled Spiced Baklava Muffins

A delightful twist on the classic Mediterranean dessert, these muffins are infused with warm spices and sweet honey, offering a comforting aroma and unique flavor profile.

  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup Greek yogurt
  • 1/2 cup finely chopped walnuts
  • 1/4 cup chopped pistachios
  • Zest of 1 orange
  • 1/3 cup honey (for drizzling)
  • Additional chopped pistachios for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cardamom.
  3. In another bowl, combine the melted butter, brown sugar, and 1/4 cup honey, stirring until smooth. Beat in the eggs one at a time, then mix in the vanilla extract and Greek yogurt until well incorporated.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Gently fold in the chopped walnuts, chopped pistachios, and orange zest.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  9. Once cooled, drizzle each muffin with 1/3 cup honey and sprinkle with additional chopped pistachios.

Notes

Optional: Toast walnuts and pistachios before adding to enhance their flavor. You can substitute Greek yogurt with sour cream for moisture.
