Homemade Thin Mint Cookies

A delightful blend of rich chocolate and refreshing mint, these Homemade Thin Mint Cookies are reminiscent of classic Girl Scout cookies and perfect for any occasion.

  • 1/2 cup (113 g) unsalted butter, softened
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (110 g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups (240 g) all-purpose flour
  • 1/2 cup (42 g) unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 12 ounces (340 g) semisweet chocolate, chopped
  • 1/2 teaspoon peppermint extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. Cream the softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy, about 2–3 minutes.
  4. Add the egg and vanilla extract, and beat until blended.
  5. Gradually mix the dry ingredients into the butter-sugar mixture until a soft dough forms.
  6. Roll the dough into small balls, flatten them slightly, and place on the prepared baking sheets.
  7. Bake for 7 to 8 minutes, until edges are set but centers remain soft.
  8. Cool on baking sheets for 2 minutes, then transfer to a wire rack to cool completely.
  9. Melt the chocolate in a heatproof bowl over simmering water or in the microwave, stirring until smooth, and mix in peppermint extract.
  10. Dip cooled cookies into melted chocolate, ensuring even coverage, then refrigerate until chocolate is firm.

Notes

For added flavor, sprinkle a pinch of sea salt over the chocolate before it sets, or add crushed peppermint candies for extra crunch.
