1 box white cake mix
2 large eggs
1/3 cup vegetable oil
1 tsp vanilla extract
Green gel food coloring
1/2 cup powdered sugar (for coating)
1/4 cup raspberry jam
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the white cake mix, eggs, vegetable oil, vanilla extract, and green gel food coloring. Mix until a soft, cohesive dough forms.
Roll tablespoons of dough into 1-inch balls.
Coat the balls generously in powdered sugar.
Place coated balls on the prepared baking sheet, spacing them about 2 inches apart.
Create a small indentation in the center of each ball using your thumb.
Bake for 10-12 minutes until puffed and set around the edges.
Add a small dollop of raspberry jam into each warm cookie’s center.
Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra flavor, add a pinch of almond extract. Chill dough if too sticky.
