Healthy Baked Feta Potatoes

A simple yet delicious dish combining creamy feta cheese with tender baby potatoes and vibrant cherry tomatoes, baked to perfection.

  • 1.5 lbs baby potatoes
  • 1 block (7 oz) feta cheese
  • 1.5 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon black pepper
  • Salt to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes thoroughly and cut them into halves or quarters.
  3. In a large baking dish, combine the potatoes, cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and a pinch of salt. Toss to coat.
  4. Place the block of feta cheese in the center of the dish and drizzle with olive oil.
  5. Bake for 35 to 40 minutes, stirring halfway through.
  6. Once cooked, remove from the oven and stir the feta into the mixture.
  7. Garnish with fresh basil or parsley and serve warm.

Notes

To enhance flavors, consider adding extra vegetables like bell peppers or zucchini. Microwaving the potatoes before baking can save time.
