Ground Turkey and Sweet Potato Bake

A delicious and nutritious bake featuring savory ground turkey, creamy sweet potatoes, and vibrant greens, topped with melted mozzarella.

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 2 cups fresh spinach, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh cilantro or parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet over medium heat, add olive oil and sauté the onion and garlic until translucent, about 3-4 minutes.
  3. Add ground turkey, breaking it apart. Cook until browned, about 7-10 minutes.
  4. Stir in sweet potatoes, smoked paprika, cumin, salt, and black pepper. Cook for another 5 minutes.
  5. Add spinach and stir until wilted, about 2 minutes.
  6. Transfer the mixture into a greased 9×13 inch baking dish.
  7. Top with shredded mozzarella cheese.
  8. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  9. Let cool slightly, then garnish with cilantro or parsley before serving.

Notes

Use ripe sweet potatoes for the best flavor. Feel free to add other veggies like bell peppers or zucchini.
