  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 teaspoons garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon chili paste
  • 2 tablespoons vegetable oil
  • Fresh cilantro, for garnish
  • Wooden or metal skewers
  • 1/3 cup creamy peanut butter
  • 1 tablespoon honey
  • 12 teaspoons chili paste or sriracha (optional)
  • Water, as needed

Instructions

  1. In a large bowl, mix together the soy sauce, brown sugar, fish sauce, lime juice, minced garlic, ginger, and chili paste to create a marinade.
  2. Add the chicken pieces to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 30 minutes.
  3. In a separate bowl, whisk together the peanut butter, soy sauce, honey, lime juice, and chili paste. Add water gradually until you reach your desired consistency for the peanut sauce.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken pieces onto the skewers.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until cooked through.
  7. Check that the chicken has reached an internal temperature of 165°F (74°C).
  8. Drizzle the skewers with peanut sauce and garnish with fresh cilantro before serving.

Notes

For extra flavor, consider marinating for longer than 30 minutes. You can also add vegetables to the skewers for added nutrition.
