Gingerbread Cheesecake Cookies are a delightful blend of spiced gingerbread and creamy cheesecake, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 cup packed brown sugar
  • 2 tsp ground ginger
  • 8 oz softened cream cheese
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, ground ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing in the vanilla.
  4. In a separate bowl, blend the softened cream cheese with powdered sugar and vanilla extract until smooth.
  5. Use a cookie scoop to portion the dough onto lined baking sheets. Make an indentation in each and fill with cream cheese mixture, then cover with more dough.
  6. Bake for 12-15 minutes, until edges are golden brown. Cool on wire racks.

Notes

For best results, use room temperature ingredients. Chill the dough if too soft to handle.
