Garlic Tomato Chicken with Mozzarella

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, and dried oregano.
  3. In an oven-safe skillet, heat the olive oil over medium heat and sauté the minced garlic for about 1 minute until fragrant.
  4. Add the seasoned chicken breasts and cook for 5-7 minutes on each side until golden-brown.
  5. Toss in the halved cherry tomatoes and stir gently to combine.
  6. Evenly sprinkle mozzarella cheese over the chicken and tomatoes.
  7. Bake in the preheated oven for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is melted.
  8. Garnish with fresh basil leaves before serving.

Notes

For added flavor, consider marinating the chicken in Italian dressing before cooking. You can also substitute chicken with firm tofu for a vegetarian version.
