Fruity Pebbles Cookies

Delightful, crunchy cookies that combine iconic fruity cereal with creamy white chocolate chips in a soft, chewy cookie.

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 2 tablespoons vanilla extract
  • 1 1/2 cups Fruity Pebbles cereal
  • 1 cup white chocolate chips
  • 1/2 cup rainbow sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then add the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients.
  5. Fold in the Fruity Pebbles, white chocolate chips, and rainbow sprinkles.
  6. Drop spoonfuls of dough onto the baking sheets, leaving space between them.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Allow to cool on the sheets for a few minutes before transferring to wire racks.

Notes

Chill the dough for thicker cookies and consider adding a pinch of almond extract for extra flavor.
