  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup milk (or buttermilk for extra tang)
  • 1 large egg
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese (optional)
  • Vegetable oil, for frying
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving, optional)

Instructions

  1. Gently wipe the mushrooms with a damp paper towel to clean.
  2. Slice the mushrooms into approximately 1/4-inch thick slices.
  3. In a shallow dish, whisk together flour, garlic powder, onion powder, thyme, oregano, cayenne, salt, and black pepper.
  4. In another dish, whisk together milk (or buttermilk) and a large egg.
  5. In a third dish, combine panko breadcrumbs and Parmesan cheese (if using).
  6. Toss sliced mushrooms in the seasoned flour, shake off excess.
  7. Dip floured mushrooms in the egg mixture to coat.
  8. Coat mushrooms with breadcrumbs, pressing gently to adhere.
  9. Heat vegetable oil to 350-375°F (175-190°C).
  10. Fry breaded mushrooms in batches for 2-3 minutes on each side until golden brown.
  11. Remove with a slotted spoon, transfer to a wire rack lined with paper towels to drain.
  12. Garnish with parsley and serve immediately with optional lemon wedges.
