Fiery Chicken Ramen with Garlic

A delightful noodle dish with rich, spicy broth infused with aromatic garlic. Perfect for a cozy dinner or hosting friends.

  • 2 boneless, skinless chicken thighs
  • 4 cups chicken broth
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon chili paste
  • 2 packs of ramen noodles
  • 1 tablespoon sesame oil
  • 1 cup sliced green onions
  • 1 cup bok choy (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add the sesame oil. Once hot, toss in the minced garlic and sauté until fragrant, about 1-2 minutes.
  2. Add the boneless, skinless chicken thighs to the pot and cook for around 5-7 minutes, turning occasionally until beautifully browned on all sides.
  3. Pour the chicken broth into the pot, raise the heat until it comes to a boil, and stir in the soy sauce and chili paste.
  4. Reduce the heat and let the broth simmer for approximately 20 minutes. Remove the chicken thighs and shred them using two forks.
  5. Return the shredded chicken to the pot and add the ramen noodles. Cook according to package instructions.
  6. If using bok choy, stir it in along with the sliced green onions before serving.
  7. Taste the broth and season with salt and pepper. Serve hot, garnishing with extra green onions if desired.

Notes

Use homemade chicken broth for enhanced flavor. Consider adding a soft-boiled egg or sesame seeds for extra flavor.
