Fancy Pomegranate Lamb Chops

Delicious lamb chops marinated in a sweet and savory pomegranate sauce, perfect for special occasions.

  • 8 Lamb Rib Chops
  • 1 tsp Sea Salt
  • 1 tsp Black Pepper
  • 2 tsp Garlic Powder
  • 1 tsp Dried Parsley
  • 1.5 cups Pomegranate Juice
  • 2 tbsp Extra Virgin Olive Oil
  • 6 cloves Garlic, minced
  • 2 sprigs Fresh Thyme
  • 2 tbsp Unsalted Butter
  • 1 tbsp Cornstarch
  • 3 tbsp Warm Water

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine the pomegranate juice, minced garlic, thyme, sea salt, and black pepper. Mix well.
  2. Marinate the Lamb: Place the lamb chops in a resealable bag or dish, pour the marinade over, and refrigerate for at least 30 minutes.
  3. Heat the Pan: Preheat a skillet over medium-high heat and add olive oil.
  4. Sear the Chops: Sear the lamb chops for 4-5 minutes on each side until cooked to desired doneness.
  5. Make the Sauce: Remove lamb from skillet and add butter and remaining marinade, scraping bits from the pan.
  6. Thicken the Sauce: Combine cornstarch with warm water, then add to the skillet and stir until thickened.
  7. Serve: Plate lamb chops and spoon pomegranate sauce over them. Garnish as desired.

Notes

For perfectly cooked lamb, use a meat thermometer: 145°F for medium-rare and 160°F for medium. Leftovers can be stored for up to three days in the refrigerator.
